Blueberry Chocolate Avocado Mousse

Prep: 10 minutes


200g dark chocolate

2 ripe avocados (chopped)

½ cup coconut cream

2 tbsp maple syrup (or to taste)

1 punnet Blue Royal Blueberries


1 Microwave the chocolate in a heat-proof bowl in 30-second bursts, stirring in between until smooth. Set aside.

2 In a food processor, blend avocado, maple syrup, and coconut cream until smooth.

3 Fold the avocado mixture into the melted dark chocolate until combined.

4 Divide the mixture between four glasses and top with blueberries – dig in!
