Blueberry Mojito

Prep: 7 minutes


16 Blue Royal Blueberries (8 per drink) + extra to garnish

1 lime, cut into 8 wedges

2-4 tsp raw sugar (to taste)

12 fresh mint leaves

120 ml white rum

1 cup ice cubes (crushed)

Soda water (to top)


To garnish:

Extra blueberries, lime and mint.


1 Divide the blueberries, lime wedges and raw sugar between two tall glasses. Use a cocktail muddler (or the end of a wooden spoon) to muddle the blueberries and lime wedges into the sugar.

2 Add 6 mint leaves to each glass and muddle further to release the mint flavour.

3 Divide the white rum evenly between the two glasses and stir well.

4 Top with crushed ice cubes and pour over the soda water, leaving a small gap at the top of the glass for extra blueberries to garnish.
