1 cup Blue Royal Blueberries
½ cup plain Greek yoghurt
Zest of 1 lime
¼ cup coconut chips (toasted)
1 cup dark chocolate (chopped)
1 In a medium-sized bowl, combine the blueberries, coconut chips and lime zest with the yoghurt and mix together until the blueberries are fully coated.
2 Scoop teaspoon-sized clusters onto a baking paper lined tray. Freeze for about an hour or until the yoghurt has hardened.
3 Add the dark chocolate to a large heat-proof bowl. Melt in the microwave in 30 seconds bursts, stirring in between until smooth.
4 When the yoghurt clusters have frozen, dip each cluster into the melted chocolate. Enjoy right away or keep in the freezer for about a week.
